High Country Ballad

Quokka’s proprietary system of technical maturation delivers a spirit ‘equivalent’ to spirits traditionally barrelled for 18+ years. We (Craig and Joscelyn) get a real kick out of watching the reactions as spirit drinkers discover how good a spirit can be without the need to be sequestered away for 20 years. 

The High-Country Ballad has a flavour profile, mouth-feel, complexity, and vibrancy that re-defines what Aussies can expect from a spirit. 

Inspired by the cool glades and warm valleys of the Border Range’s High Country; a sip will tell you a story of woods, fields, hearth-fires and good memories. A story of friends, good and hard times, and the moments that make memories.

In traditional whiskey making, the ‘sap’ (sharper, brasher, and more pronounced flavours) was drawn from wooden barrels with a first wash of alcohol (this is essentially the origin of bourbon) before meeting the spirit destined to become whiskey.

Following in this tradition for the High Country Ballad, once the Bush-Ranger’s Ballad production has stripped the wood of its more volatile flavour elements typifying the classic Bourbon whiskey profile, American White Oak, European (French) White Oak, and European Red Oak are brought together once more after re-toasting and re-charring. The wood is then prepared and able to offer a less brash, more thoughtful, and subtly higher complexity of flavour profile of the High-Country Ballad. 

The High-Country Ballad‘s flavour profile and complexity will be familiar to premium highland scotch drinkers with a comforting, refined, understated, but ultimately all encompassing palate. The mouth-feel and smoothness feels very familiar to lovers of good Irish Whiskeys.

Subtly complex flavours and bouquet notes intrigue the palate, right from the first taste through to the last of the pure flavours fading away, still as clean as the first sip.
